This Mother’s Day, we’re celebrating with one of Chef Dave’s personal favourites: Lemon Ricotta Pancakes with Berry Compote. It’s a brunch dish that’s light, indulgent, and bursting with spring flavours—perfect for treating Mom.

🍋 Lemon Ricotta Pancakes

Ingredients

1 cup ricotta cheese

1 cup milk

3 eggs, separated

1 tbsp lemon zest

1 tbsp lemon juice

1 cup all-purpose flour

1 tbsp sugar

1 tsp baking powder

Pinch of salt

Instructions

In a large bowl, whisk together ricotta, milk, egg yolks, lemon zest, and lemon juice.
In a separate bowl, mix flour, sugar, baking powder, and salt. Fold into the wet mixture.
Beat egg whites until stiff peaks form and gently fold them into the batter.
Cook pancakes on a lightly greased skillet over medium heat, 2–3 minutes per side.

🍓 Berry CompoteIngredients

2 cups mixed berries

1 tbsp honey or maple syrup

Squeeze of lemon juice

Simmer over low heat until the berries start to break down. Spoon over pancakes.

Optional Toppings: Whipped cream, fresh mint, or crushed pistachios and a sprinkle of love for your mom!
